Pumpkins are back in the grocery stores, Starbucks has brought back their pumpkin spice lattes and to celebrate I decided to make these super easy pumpkin spice muffins. The best part? Theres only 2 ingredients!
Heres what you'll need:
- 1 box spice cake mix $1.25
- 1 15 oz can of pumpkin $1.89
Thats it! If you want you can add in lots of fun toppings like raisins, pecans, dark chocolate chips, or cream cheese frosting. The possibilities are endless!

The steps to make these muffins are pretty easy, it feels almost silly to do step by step explanations, but i guess I'll do them anyways.
First preheat your oven to 350 degrees.
Add the dry spice cake mix and pumpkin to a large mixing bowl and stir to combine everything. This batter is very thick because we aren't adding any liquid, so just keep on stirring until all those lumps are out! you can do it, I believe in you! The finished batter should look something like the batter below.
At this point you're going to want to stir in any add-ins. I decided to add 3/4 a cup of dark chocolate chips. Yum!
I chose to line my muffin tin with these paper liners, but feel free to skip this step if you want. If you're not using liners, make sure to spray your muffin tin with non-stick cooking spray. Then, divide your batter into the 12 muffin sections and smooth the top so they look neat.
I decided to top each muffin with a few chopped pecans.
Bake your muffins for 20-25 minutes, you'll know they're done when you insert a knife or toothpick and it comes out clean.
